English Pickled Onions - Pub Style

I have this idea to make pickled onions from the recipe below. Instead of pearl onions, I am thinking of using the bulbs of Cebollas de Cambray. These are the onions with green onion on the top, and then a fairly large bulb. They are often used with grilled meats. Should work. Good time of year to plant. Have 700 seeds.

During my apprenticeship I worked in a famous north of England restaurant/ pub ,where we made pickled onions regularly to go with the cold luncheon buffet ..your recipe looks kinda boring ….try what I believe is a Canadian website called..Spruce eats and sorta combine with your own recipe ..Ian

Here is another recipe for pickled onions. It is almost exactly the same as Chillin's but there are reasons included for some of the things mentioned... and comments. Do not can using a water bath and why... the importance of the salt bath... and the importance of using malt vinegar and where to find it in large quantities.
