Even the world famous Bulgurian yogurt does not need scalding if you use pasturized whole milk. The Amasi yogurt takes one day, at room temperature. I just offered bulgarios to anyone of my friends wanting to make kefir and didn't have any takers. I tossed what I could no longer feed. Given its great immune boosting qualities, it's hard to imagine why in the midst of a pandemic people aren't eager to drink it every day, and/or use it instead of buttermilk in baking.
