Yogurt Starter Cultures

Fresh, natural yogurt is so easy to make. Even the world famous Bulgurian yogurt does not need scalding if you use pasturized whole milk. The Amasi yogurt takes one day, at room temperature. It tastes like a mix between butter, buttermilk, and yogurt. It is wonderful on its own or as a marinade.

Kefir is easier and has far more probiotics than yogurt.

I just offered bulgarios to anyone of my friends wanting to make kefir and didn't have any takers. I tossed what I could no longer feed.

Given its great immune boosting qualities, it's hard to imagine why in the midst of a pandemic people aren't eager to drink it every day, and/or use it instead of buttermilk in baking.
