How many restaurants here will be gone forever?

Until one sneezes (or coughs) on it just before its packed for delivery. Or lick their fingers. Not everyone is wearing mask.

I like RV's approach because we are in the vulnerable category.

If someone frequents restaurants where food prep people and waiters sneeze on food, then they need to think about changing the restaurants they visit.

...but is their economy in the toilet like the rest of Europe?

Imagine if Ike had called off D-Day because he knew there would be many killed. Not apples for apples but it might make some think. A ruined economy means lots of deaths also, just not ID'd as CV on the death cert.

That's exactly the point.  If you read the piece you will see the Swedes have taken serious steps to limit the spread but they understood there is a trade off between having more deaths and staying economically viable.  They still limit big gatherings and other high probability of transmission activities but they did not stop their economy.
