Apple corer and slicer

The trouble is that Mexican apples can vary in size. The imported "fancy grade" are usually consistent. The best apples I have ever tasted in Mexico were from a friend's family farm in Zacatecas. They were smallish, scabby, and many abnormal shapes - but they sure tasted good!

Many fruits are preserved by producers in an air tight room, filled with a proprietary gas - they may be up to two years old.

There is a food movement now to use "ugly" produce, that farmers routinely throw away. Huge waste involved. Farmers produce to fill consumer expectations or corporate requirements. For example, they grow russet potatoes for McDonalds that have to be an exact size. As home gardners know, the non commercial or heirloom varieties taste many times better that typical storebought. This is especially true with tomatoes.

If you have time, and interest, this is a long article exploring the "ugly" produce movement, which in the Bay area, delivers a box of organic produce at 30% less than grocery stores. It is a subscription service.

I don't understand what the "trouble" is if it is not a "fancy " quality. There is a need (juice and sauce for the non fancy apples.
