Travis
Casón was the "fish of the day" at an Ajijic fonda on Friday. Not sure if the accent mark is needed but that's how waitress pronounced it. What is it casón? Thanks.
mattoleriver
Cazón: dogfish, sometimes called "baby shark." A firm-fleshed white fish, cazon is sometimes used to substitute for more expensive fish, such as huachinango — red snapper — in a wide range of dishes. Perhaps the most famous regional specialty made with cazon is Campeche's pan de cazón, tortillas with shredded fish and black beans. http://www.mexconnect.com/articles/2314-culinary-guide-to-mexican-fish-and-shellfish-las-delicias-del-mar-i 1

AngusMactavish
This clip from Yahoo has me ready to try some. Yes, dogfish can be eaten. It's widely eaten in the UK as part of Fish & Chips, usually sold under the name Huss or Rock Salmon (Spiny dogfish). It can be used as any other fish. It's not as firm as some sharks or swordfish, but it's not mushy like Basa.
CHILLIN
Well - no bones, you gotta like that. Stocks are rebuilding in Banderas Bay. During WWII there was a very large shark fishery there to provide troops with shark liver oil supplement.
