I buy caramelo candies at the store in Chapala; but I often see cajeta, which is a form of caramelized goat's milk, I believe, that tastes similar... in grocery stores all over. Tingting Posted November 23, 2018 Report Share Posted November 23, 2018 Or you could just make it...I'm absolutely not a cook (don't ask about my exploding boiled eggs), but it's super-simple to make and you can customize it for your own preferences. bmh Posted November 23, 2018 Report Share Posted November 23, 2018 liquid and sugar and heat it until t turns into caramel.. it is not complicated.. make it with raspberry vinegar and sugar to go on top of scallops..d you want it more liquid add warm water as it is forming.. More Liana Posted November 24, 2018 Report Share Posted November 24, 2018 Cajeta comes in several varieties. The most commonly found brand is Coronado, sold in bottles and jars of various sizes. One variety is "quemada", which is known in other Spanish-speaking countries as "dulce de leche". One is vainilla--flavored with vanilla. Another is envinada (flavored with wine). Another presentation is chiclosos--what you might know as caramels in the USA and Canada. Caramelized sugar is not the same as cajeta, as it contains no milk (or milk by-products). Caramelized sugar is used for many things, including making the delicious syrup that tops flan, but I don't think it would be the right thing if you actually need caramel for your purpose.
