There are lots of residents here who own very fine smokers. Maybe a collaborative effort, in return for a share. I could bring to the table a collection of tropical hardwoods and tropical fruit woods. The best whitefish for smoking is probably Pargo, a large, firm meated type of snapper. It would have to be ordered from the fish store which would pick it up early mornings in Guadalajara. I have had smoked Swordfish, but it wasn't that great. Now you are making me hungry - Smoked Black Alaskan Cod - haven't had that for years!
