I think it must be New Zealand lamb, I believe that's what Costco has. It was the best lamb I've had in my 12 years living here. I thought it was a bargain! They need to call their dish what it is, lamb chops. Agreed. And to get the best flavor of any lamb rack, it needs to be cooked as a complete rack. Otherwise it's like the difference between cooking a large prime rib roast vs. a two or three rib prime "roast." The results are vastly different.
