More Liana Posted May 29, 2017 Report Share Posted May 29, 2017 At the corner of (I believe) Guadalupe Victoria and Encarnación Rosas there's a house with a sign on the door: Pollo Fresco. Generally wings are sold still attached to backs; the whole piece is called a retazo. It's sold by the kilo. I buy as many of the whole piece as I need--if I want 8 wings, I buy 4 retazos--clip off the wings, and save the backs for making chicken stock. It's pronounced reh-TAH-soh.
