Roberto's on the Carretera: Had a private "for sale" sign for a while recently. Ask the owner, who's usually there on weekends. Beautiful spot: lots of parking. Not to nitpick, but the sign on that side of the highway changes to "Rio Zula", which goes south to Tabarka's restaurant. It was still there as of lunch last week. A huge furniture store takes up the whole strip where Tabarka and some other places used to be. I'm happy to hear Chillins is coming back. Nice folks and good times! Large interior space and as long a people are prepared to perhaps walk a block....lots of parking. Twenty years ago it was one of the somewhat infamous Giovanni's original restaurants and was actually pretty popular. In the years since it became "Trattoria di Axixic - Ristorante italiano". Closed some time back and today the location, boarded up, has become a "dump" with an itinerant group who, come and go at will, and boil down pig rind in a mixture of beer, pork fat (and only God knows what else) - commonly known as "Chicharron". Now it's a not so pleasant looking location that's "going down hill" quickly. Current external decor: empty quart beer bottles, garbage, cigarette butts, excrement, discarded clothing and.......dubious proprietors...who might eventually get run off. Not a very pleasant sight on our village's major thoroughfare. "Just Chillin" would be great......providing they can find the building's owner......and get a workable lease that will stand the test of time. THIS MIGHT BE A GOOD TIME TO ACTIVELY SOLICIT A LARGE BREWERY TO HELP OVERSEE THE SET UP AND ENSURE THAT "DRAFT BEER" BECOMES A SIGNIFICANT PART OF THE PLAN. IF NOT A MAJOR BREWERY, THEN PERHAPS "MINERVA" WOULD BE A GREAT CHOICE. THEIR "LA DOCENA" RESTAURANT LOCATIONS IN GUADALAJA (PUNTO SAO PAUL0 & ANDARES) COULD BE A REFERENCE POINT, BUT HERE IN AJIJIC MORE OF A "PUB STYLE" MEETING AND EATING PLACE WOULD BE A BETTER FIT. YOU MIGHT EVEN FIND A FEW INTERESTED INVESTORS AND MAKE SURE YOU HAVE ACCESS TO REPUTABLE LEGAL COUNSEL! THERE HAVE BEEN FAR TOO MANY INCIDENTS OF RETIRED RESTAURANT OWNERS COMING OUT OF RETIREMENT WHEN THE CURRENT OPERATOR BECOMES MORE SUCCESSFUL THAN THEY WERE AND.....GUESS WHAT?..........THE NEW OPERATORS FIND THEMSELVES OUT ON THE STREET! Tom's bar, when it was open, did serve fairly decent "bar food" such as burgers. It would probably take some heavy fumigating to get rid of the cigarette smell since Tom was one of the last hold outs on that. Also, it may not be big enough. I'd love to see a real pub here with some really good bar food and a nice selection of draft beers. It has been tried here before but never seems to quite click, not sure why. There's some really good suggestions here. The La Una space is really high quality and large but probably pretty pricey too. The old Toscana location is a great suggestion as it offers indoor/outdoor ambiance and can draw easily from both Chapala and Ajijic and points in between. I'll bet the rent is right too. We're not fond of restaurants located right on the carretera in town because of the noise factor. That was a big problem for us with the El Serape location, way too noisy from traffic. What's up with Roberto's? Roberto's: The last time I chatted with Bobby, he had put that "for sale" sign out front and I kidded him that it was the "kiss of death" to do that. Since then, he either thought better of it and took it down or he was lucky and found a buyer. He really wants to retire and stay at his place at the beach without those long drives from Colima. He had a negative experience with his last partnership attempt, but who knows what kind of arrangement he might be open to at this point? Anyone interested should just talk to him. Already set up as a restaurant with a dance floor. The Córdoba closed many years ago, was vacant for many years, another restaurant opened a few years ago and only lasted a year or so, and has been vacant since. Up for sale or rent.
