CHILLIN Posted January 25, 2016 Report Share Posted January 25, 2016 One hint - the local beef here is quite small, so the tails will be small, and hard to find. Beef neck bones and beef shank bones have the most flavor on beef, but they are almost all muscle, and need a long, slow braise to get out the toughness - but it is sure worth it.
