Superlake - Butternut squash

Superlake has a selection of winter squashes back with the vegetables. Most of them are small butternuts, but there are also large pumpkins and decorative gourds. I think there were a few spaghetti squash also.

Well, I thought it was novel enough to report. :) Usually these things sell out quickly and aren't restocked.

A butternut squash is a "winter squash". It has a dense orange flesh and I treat it like any pumpkin squash. I like to peel off the skin. Scoop out the seeds. Cut it into large cubes. Toss it in olive oil with minced garlic. Spread it on a pan. Sprinkle with salt, pepper, and parmesan cheese. Bake until tender and a little brown.

cut in half, scoop out seeds add butter/brownsugar, bake 1 hour+/- 350

Yes, that's my no fail solution to most winter squash. Sometimes started by face down in a water bath in the oven for a while. Peeling them is a major hassle.
