Bacon flavour

No one here likes bacon, right? I mean, you eat it because it's expected of you. Especially if you're like me: Canadian.

And the search for a good bacon is almost pointless for home cooks around Lakeside. Tony's and Bull's Butcher seem to have the best, but it's not properly smoked, nor is it maple-flavoured, nor does it have the texture... you get what I mean. I've bought from so many butchers in Chapala and Ajijic, it's silly.

So I bought some McCormick Grill Mates Sazonador Ahumado Con Maple at CostCo. You can sprinkle this on anything, like chops, salads, etc. But I really like to add it to the pan while the bacon is cooking. It actually gives me a taste that's more likeable than the generic finished pork belly that passes for bacon here. Thick cut, of course.
