ComputerGuy
Is there any kind of cheese here that approximates curds? This is for someone who is hankering for poutine, something which I'm proud to say I've never eaten.
maw7815
Ah cheese curds- i bring them back from Wisconsin when I visit- lots of different flavors now. However there are none to be found here in Mexico. maw
ComputerGuy
This I know too well. However, looking for something that has the same or similar properties, not mozzerella.
More Liana
You could try quesillo, the string-cheese-like product from Oaxaca. The La Villita brand would cut into curd-like chunks--it's not thin strips wound into a ball, the 'strips' are about the diameter of my ring finger. 1/2"-ish.Post back. Poutine, for pete's sake. But them as loves it, loves it. Eh?

CHILLIN
Look up paneer cheese recipes, very popular in India and among vegans. Easy to make. Just boil milk, and curdle with limon. It is a fresh cheese, but all sorts of flavors may be added. The curds are often lightly fried. The curds also freeze well.
maw7815
I made paneer for the first time a month ago. You cannot use ultra pasturized milk that comes in tetra packs. It will not curdle. It tastes nothing like cheddar cheese curds- it has a taste of it's own and is very mild- I added lots of fresh cracked pepper to give it more flavor. maw
