El Saltos
Ray is very good. It's firm flesh, very moist, and tasty.

Is cheap and very healthy.

zerbit
I have had skate wings sautéed in butter with white wine and shallots, with a dash of lemon and parsley, just like eating a delicate Dover sole. Very nice! Skate's are smaller, I don't know how a larger ray would cook up.
