There seems to be something going on in Guanajuato as hotels are booked but if you know of a place there let me know. Maybe north of Guadalajara would be good, Jalostotitlan, where the inlay woodworkers are but how do you find them there? Or still over in southeast in Mich for Delores Hidalgo?
