Aged Beef at Carnicera “Dona Kary”

This butcher shop is in San Juan Cosala and they are open 7 days a week.

The owner Ray, Speaks English, he was raised in Wisconsin. His Cell number is

331-416-1535. You can place special orders for Lamb and other type of meat that

you want in quantities by calling or stopping by.

These are his prices per kilo in pesos for aged beef and pork; the prices are good until the end of 2010.

Their address is Profirio Diaz #83. This is one block south of the main road, the Carretera, and two blocks west of the SJC main square or plaza. His Filet is the best we have had from any butcher that we have tried in the past 10 years that we have been here.

How old is aged. I prefer 14-21 days. Anything less is not worth the drive to SJC

This shop does not carry Lamb but will get it as a special order. The shop tries to have the best beef and they age it for two to three weeks. You can special order any cut of lamb and Ray will let you know when he will have it. As far are the beef, each cow is different and they try to get the better grade but they buy their cattle when they are alive and feed at a ranch before being slaughtered and then they age the beef.
