I know who is going to call me back and who is not,so the ones that don't, I keep calling until we connect. It ain't no big deal in the overall scheme of things and it ain't an insult. -

The regularly available lobster tails I saw at Pacifico in SAT where maybe not even half the size of those in my OP so I didn't bother going there.
-
I stand corrected but the price is not insane for 4 tails weighing over a lb each.

I am neither. I do strongly object though, to certain things which I address with what I call terminology 101. -

I am the admin/mod of a specialty group on FB with over 3200 members and I do both successfully. There is excellent member participation as well, not just a few like on some boards-eh! I have not had many occasions to dump non complying members. I have even let some posts stand which contained colourful language[of the type not permitted here] to describe me and didn't remove the poster-they left of their own accord. -
I never overcook duck,it was juicy and tender except for the ultra crisp wing bits you are probably looking at which i really like that way and as the chef i get to grab one for my plate first. the juicy breast chunks with crisp skin have already been grabbed from the platter. Wild duck that I shoot,I do rare.

The picture shows how it turned out and I bought it frozen because of not knowing what my time frame for making the meal was going to be. If it was not excellent I would have not made this post.

We are originally from Europe so we do xmas eve just like Mexicans. Roast Muscovi duck. Hungarian bread dumplings. red cabbage and gravy. Oh, and several brands of beer,Czech,Spanish,German and [gasp!] a Chinese Pilsener. Then for dessert English trifle and snifters of Grande Marnier. Got the locally raised 3.5 kilo duck from los 3 butchery. You can get it fresh or frozen.

Always yes except to hospitals. Cash for airline tickets yes. Never rent cars and absolutely never use a card in retail stores. My doctors accept cheques but mostly I pay cash to them too. -

Rational post! In addition to using the same protocols, I trust my doctors here implicitly to keep me alive and they are all Mexican.
