  1. Many of you may know of Tony Moriarty's passing if you're in his and Allenda's facebook circle, but I wanted to share this for those who may not have heard. Tony & Allenda called lakeside and the Raquet Club home for nine years, loving Mexico, and only returning reluctantly NOB for some health issues. A good friend, a good man, a good husband, a good father.

  2. I've never shared this before, but I do two things that I've never seen/read in making burgers at home.

    First, growing up I learned that sometimes it helps to put dried bread crumbs in the mix to help hold in moisture, and sometimes to keep the leaner ground from falling apart while cooking. I've found that using stovetop stuffing mix works wonders instead. (I prefer Pepperidge Farm Herb Seasoned Chicken flavor myself.) It works well for me.

    Second, since I broil my burgers (top heat) rather than grilling (bottom heat) and I like 'em thick, I shape them like half-formed donuts - about twice as thick around the edges as in the middle - concave. That way, the juices collect in the middle of the cooking burger rather than draining into the pan/fire. Also, it eliminates the problem of a burger being burned around the edges and undercooked in the middle. When I flip them, I drain the juice puddle into the other burger's puddle. As the burgers shrink while they cook, as they are wont to do, they end up the same thickness all the way through.

    I leave it to others to debate ingredients and such. (Well, for me: liquid smoke and freeze-dried chives are a must.)

    Obviously, Duckie Hoomever is not the name on my driver's license, but it is the name by which all my friends in Mexico know me - some probably wouldn't recognize my driver's license name. I even have a THIRD identity for my blogging self! (Nope, not gonna spill here.)

    All, if I were going to lead this project again, the only regret I have is that when it was said the prepaids would have priority, it should have been qualified with the statement:  "conditioned upon Ilox being able to keep their crew and asset utilization up at reasonable levels."  That means, where they've built out an area, they can install, at least 2 - 3  per day.  But they weren't able to do that. so they've had to adjust to keep things financially viable.  Right now they're in Raquet Club, then they'll go to Riberas, then probably back towards Joco. They're working hard.  They've had some crew turnover.   Because there have been  issues, and the installs are a few months behind, they are reluctant to commit to specific dates.   That may also be a Mexican cultural thing, but thats all it is.   
     
    If you have prepaid and are unhappy, go to the Ilox office and fill out the refund form and they'll have you a check cut within one or two days.  Otherwise, they are working  hard to catch up on the installs and good progress is being made.  Refunded accounts will go to the end of the queue.  Believe it or not, they are prioritizing, just in ways that keep asset and crew utilization up.  
     
    Your other options are to keep complaining.  I don't know how that will work out.  You might get a good answer.  Or a refund check you didn't request.  Or a lawsuit.  My advice however is that you chill and enjoy this country for what it is.  If you prepaid, you might reflect on the fact that payment supported a campaign that unleashed the great benefits of competition.  Telmex is furiously upgrading the rest of lakeside with VDSL and fiber..Telcel Internet en Casa also said to work well now.

  5. Cedros just posted on another thread that Ilox is stringing lines in the Raquet Club today.  Anyone there connected yet?

    Also (kinda hate to ask, but...) can someone either post a link or text for the internet packages they offer? I've been slogging through past posts and searches on Mr. Google, but I'm betting some y'all have that info at your fingertips. Thanks.
