Maybe I'm not observent enough, but need skim milk. What does one use here ?

Yeah, but they don't call it "skim". 1% or Low Fat or something.

Leche descremada (skim), sometimes seen as Leche Light (as in the brand LALA Light); leche semidescremada (equiv of part-skim); leche entera (whole)

for skim, I like Alpura's Leche "Mujer". It has +- 1g of fat per glass (it says 0% grasa on the label, but I think it's closer to 1%). Tastes good, too (and I'm not a big milk drinker).
83 calories per glass and has extra protein, fiber and calcium in it. Just because it says "mujer" on it, doesn't mean it is just for women.
