banana bread and bran muffin recipe

anyone have a super moist recipe for banana bread and healthy bran muffin recipe? Something easy and that you can add different fruits to. Also do you bake for longer or shorter times at this elavation? I am a very plain cook and baker.

I don't know about adding different fruits, I have only used bananas. I have made this at 9000' in Colorado and here with no corrections for altitude.

Mad Marci's Killer Banana Nut Bread

This recipe was based on “Very Moist Banana Bread” in RecipeZarr. I lightened it up by using less sugar, and substituting oil and applesauce for the oil. I often use only the applesauce or applesauce and light olive oil.

2 loaves

4 - 5 very ripe bananas (five is best and black or nearly so works best)

3 large eggs

1 tsp vanilla

¾ cup unsweetened applesauce and vegetable oil (up to half and half)

1 cup sugar or ½ cup Splenda Plustm for baking

½ tsp salt

2 ¼ cups flour

½ tsp cinnamon

1 1/3 tsp baking soda

¼ cup buttermilk or sour milk

1 cup chopped pecans

1.Heat oven to 350 degrees. Grease or spray 2 8” x 4” loaf pans

2.In a large bowl, mash bananas

3.Add eggs, vanilla, and oil mixture and blend

4.Add dry ingredients and stir well

5.Dissolve baking soda in milk. Put this in a container bigger than one cup. It will foam up a lot.

6.Add milk mixture to rest of ingredients and mix well.

7.Fold in nuts and pour into greased pans

8.Bake for about 1 hour and 5 minutes depending on your oven. Start checking for doneness at 55 minutes. (especially with Pyrex pans)

9.For a moist bread, a toothpick should come out almost clean. Totally clean will mean a dryer loaf.

10.After removing from oven, let cool for 15 minutes and remove from pans. Bread will freeze nicely.

Some banana tips:

This bread is best with very ripe, black bananas. Put ripe bananas in the freezer. They will ripen a little more and stay usable for several months. The frozen bananas will thaw in less than an hour at room temperature.

You can also ripen a banana in the microwave. Start with 30 seconds. Add 15 more seconds, continue until ripe.
