The new 4, now Cuatro

El Saltos

Recommended Posts

We went to the grand opening of Cuatro, which is #4 reborn. Kim has a new partner named Jean, a Frenchman recently from Orlando, FL. The evening was wonderful, the food as good as ever, and the ambiance enhanced by a jazz trio from Guadalajara including Jimmy Barto on trumpet. It was a magical evening. Cheers! to having Kim and 4 alive again!

Can we conclude that the offerings and the price point are basically unchanged?

The place did last for nearly 5 years operating that way. It is hard for me to believe it was a losing proposition all that time. I think they offer something unique to this area, a classy and premium venue that broadens entertainment and dining opportunities here.

I'm glad to hear they managed to put together a team and reopen. Good fortune to them.

I really dislike the practice of a huge months long closing for good campaign followed weeks later by a surprise grand opening. The old number 4 was too rich for my blood and unwilling to accommodate a dietary food allergy. I doubt I will try the new one but I wish them good luck.

At the time they closed, there were efforts being made to keep it open but none had borne fruit. The deal with the new co owner was apparently closed after the closing and allowed the place to reopen.

It is strictly a special occasion place for us but I'm happy for the people who worked there including one young lady who is a very fine server and a pleasure to be around. We're looking forward to our next special occasion.

We dined here last night. The menu is pretty much the same. Prices of entres are higher by maybe 10p if my memory is correct. The food was exceptional from house salad to french onion soup to shortribs and pasta pomodora. Bravo!

I had the shortribs once at Arileo and while good, there was little to no sauce. Cuatro's were accompanied by a dark rich aromatic sauce. I had them once at St Remy and they were tough, like they needed a couple more hours of braising and they were 50% more expensive than Quatro's.

Exactly my experience. And the meat was dry. The first time I had them they were moist, there was sufficient sauce, and the red wine came through. Delicious. I tried them twice more, but they were never again so good.

BTW, I think they are getting overwhelmed at Arileo. Two Thursdays ago I was there and 12 persons at 3 different tables around mine got up and walked out, the service was so slow. It took almost an hour to order.
