It was so highly smoked that that was all we could taste. It also seemed to have a lot of fat in it. I would not even give it to our maid. We threw it in the garbage and felt like we wasted the 85 pesos we had paid for it.

He makes lots and lots of different stuff - try the sausages - both chicken and pork in many different flavors - they are great on the grill!

Sorry you didn't like my comment. I was only being truthful and some of the Mexican community has different tasts than some of us do. I often give our maid things that we have bought that are way too spicy for us. We also frequently buy rotisseried chickens for her and her family.
gringal Posted July 31, 2012 Report Posted July 31, 2012 Both kinds of meatballs are delicious. The Italian ones are spicy, but the Greek meatballs, which are not, are just right for me. They make a great sandwich, among other things. The breakfast sausages are another favorite. If you find some of the other sausages (the bratwurst or Italian, for instance) too salty/greasy, spear it with a fork several times and boil it for five minutes. Takes care of both issues. I'm a big fan of his products because he doesn't have any of those nasty additives found is most commercial products. If you want a real turnoff, read the label on the Johnsonville products, which are so popular. Those, I wouldn't give to anyone. They're unhealthy. He will have samples of all his products at the Monday market at Hole in One.

Everybody's taste buds are different...Big Daddy's sausages suit ours to a T. I found him at the Wednesday Tianguis and really appreciated the fact that I could taste before I bought. I hope he's around for a good long time.
liquipure Posted July 31, 2012 Report Posted July 31, 2012 Me too! We tried the bratwarst last week and will "kick it up a notch" next time with either the Mexican or Suicide dogs! Tonight we are having the Greek meatballs, with tzatzki (sp?), Greek roast potatoes and Greek salad, Om pa,pa or whatever the Greeks say!! Looking forward to something different for dinner tonight!

One day I went to the Monday market especially to get the meatballs and he didn't have any more - I was late. So he gave me the greek yogurt for free. I picked up the meat balls at El Torito and got hooked on both.

The Polish is one of the worst wursts, I have ever had. there was no flavor and the fatty after taste was blecch! We ended up throwing away everything we tried and cooking another meal. He asked for personal input,which I gave him but to no effect. There are some super sausages available at Wallyworld and Soriana without subjecting yourself to this guy's product simply because he's a nice guy. And he is that, but a skilled sausage maker he isn't..

Please also tell us if you know what the ingredients are, and whether they have additives and preservatives as part of the product. I've never met Big Daddy, so I don't know if he's a nice guy or not...........but his is the first sausage I both liked and felt okay about eating, as in it being healthy food. It very much reminds me of the sausages we were able to buy when I was a kid and home made sausage was still available. It tasted different than the commercial brands of today. I'm not fond of all his sausages, but that's just a matter of preference. BTW, making meatballs is time consuming, at best. I try to be "retired" as far as the kitchen is concerned.

I can't eat very spicy food. Tummy objects. I can and do love foods with flavor, made with care and without additives, preservatives and all the junk that puts that type of meat product on the list of unhealthy foods. Therefore, I laud this business and hope it stays.

The Italian meatballs are good too; I have some of the Greek meatballs, but haven't used them yet. Based on what I've tried, I like Big Daddy's products. It's hard to get good sausage around here so I'm glad Big Daddy's sausage varieties are available.

Sometimes we have smoked our sausages more than some people are used to. As we only add 30 % fat to our all meat pork shoulder, the taste of fat was probably form eating it cold. And, the fact that they don't contain ingredients that I can't pronounce is invaluable.

We use Mesquite wood and we make the chips ourself. However Pancho at SuperLake has a few small bags of Mesquite wood chips for sale. They cost about $30 pesos.
