Hands Across the Fry
Pan
When
Bobby Frederick arrived in Ajijic just two weeks ago he little dreamed
that his expertise as Head Chef in the restaurant he owned in So. Carolina
would be put to the test teaching the Mexican Chef at the Abastos Chapala—the
new supermarket and restaurant in the strip mall across the carretera
from the former Restaurante Flor de Cordaba—the art of making
western omelets. But that’s what happened, and the tasting team
that was on hand to watch and learn declared the finished product the
most delicious omelet they’d ever eaten. Bobby, as chefs are wont
to do, accepted all the accolades with modest aplomb, giving the credit
to the US-style sausage and fresh ingredients supplied by the Abastos.
Dessert of three large strawberries or one banana slipped on a skewer
then put in a bath of dipping chocolate was made by one of the Mexican
cooks. You can add Western Omelets to the great egg rolls and brown
rice the Chapala Abastos is known for.
